Recently I have been eating more vegetables... and it's because I've been a frequent visitor of the dining hall (dh) these days... ahem, I may or may not have sat in the dh for 3 hours last night; totally justified though since I reviewed French with a friend, no shame... anyhow, when I purchase groceries I don't typically come home with many vegetables. I will probably grab a bag of frozen vegetables to add into my simple, go-to lentil meal, but other than that, you won't find various vegetables in my refrigerator. When I'm at the dh, I'll have sautéed spinach or steamed broccoli/mixed vegetables. I've also picked up on this really complex salad recipe: tomatoes, cucumbers, and mushrooms, mixed with a little bit of honey mustard dressing and olive oil. These are all from the salad bar... raw veggies. The end result is a very delicious, satisfying, and healthy side or meal. I will continue to make it until I tire of it, haha. That salad recipe is on the simple side, with few ingredients, but these five salad recipes from How Sweet It Is are more complex (oohlala, sophisticated salads) and look so, so, so yummy.
